This special coffee is a remarkable feat of processing done well. Wilder Lazo, giant of Colombian coffee, anaerobically processed this coffee under immaculate conditions. We often see anaerobics with far shorter fermentations yielding funny flavors, but this ultra clean, floral fruit-bomb is sublime. We love its beautiful cardamom florals and deep pineapple flavor.
This coffee was harvested in November 2024 and brought to us via Desarrolladores de Cafe. After harvest only ripe cherries were collected, sorted by density, de-pulped and fermented in tanks for 300 hours. To ensure the temperature stays low, which prevents funky flavors from developing, the fermentation barrels are placed in a spring water bath for five hours every two days. After the 300 hour fermentation, the coffee was fully washed and then dried under canopy for 12 days.
