This semi-washed pink bourbon from Finca Buena Vista, run by husband and wife Edgar Motta and Susana Mences, just landed at the roastery! Cherries were picked based on density, depulped, and processed using a semi-washed protocol preserving part of the mucilage. The coffee dried on raised beds in a single layer for 16-22 days.

We are tasting berries and citrus with a sparkling acidity and a slight savory quality.
