"Prime Reserve" SL-28 just landed at the roastery mere days ago and we're launching it right away. The SL-28 variety is well-known in Kenyan coffees, but this special lot was grown in Colombia. There's a subtle hint of process flavor, but this coffee is otherwise very clean, with flavors of cherry, mandarin orange, and grape. With a bit of red wine in the finish, this coffee has nice depth and clarity.

Producer Maria Rodriguez spearheads this community-driven coffee. "Prime Reserve" is the flagship SL-28 variety offering from an association of neighboring farms called "Nucleo de gestion de Palestina". Long-time Prodigal customers may remember our San Gabriel SL-28 from a couple years ago, another lovely coffee from Maria and Finca Betania. 

This association of producers works closely with our green coffee vendor, InConexus, on advanced training in processing methods and farm management. This lot underwent anaerobic fermentation. First the ripe, whole cherries were sealed in bags for 48 hours. Then they were pulped and fermented again without oxygen for 72 hours. Then they were moved to air-flow canopy beds and dried for 16 - 20 days.
