Jorge Rojas is another Prodigal menu champion, presenting us this time with a lovely fruit forward geisha. We tasted citrus and berries, and Scott loved its tropical-fruit flavors too. This is a coffee we could drink all day long.
Jorge grew this geisha at his farm, Finca La Roca, a 7-hectare certified organic farm. We first released this coffee to our March Subscribers just a few weeks ago.
This coffee went through a two-stage fermentation process, fermenting anaerobically in sealed buckets for 48 hours. The first 24 hours were in whole cherry, and the second 24 hours were after removing the cherry. After a final washing, it dried for 18 days.
