From Cup of Excellence winning farm Hacienda La Florida in Ecuador, our friend Fabricio Coronel presented us with this nano-lot of their latest sidra harvest. This is a natural carbonic maceration, a process we don't usually dabble in, but Fabricio's ultra-clean processing yields beautiful flavors without compromise. We love this coffee's cream-soda and vanilla aromas combined with soft tropical fruit flavors of pineapple and mango.
This coffee is extremely limited and will sell out rapidly!
After harvesting, the cherries fermented in sealed stainless steel tanks for four days. After the fermentation, the cherries undergo "enzymatic rest" for 10 days in GrainPro bags. Finally, the cherries dried on screens in a humidity-controlled dark room for 30 days.
