This is the green, unroasted version of our Jorge Rojas 16-hour Geisha.

Jorge Rojas may hold the record for most-featured-producer on the Prodigal menu! This lovely geisha went to our monthly subscribers in July, and now we're releasing the limited reserve to everyone! A small number of bags remain from our July 24 subscription roast, so if you need something to drink immediately, grab one of those! Jorge's barely-processed 16-hour washed geisha features fresh, tart raspberry flavor, the dried fruit quality of raisin, and a cohesive creamy sensation.  

Jorge grew this geisha at El Jardín, a 7-hectare farm in Tolima. This coffee was floated to remove defects and then pulped immediately. It then fermented without water for just 16 hours. It was washed the next day and dried in a deliberately slow process involving three rest periods on days 5, 9, and 13, for a total of 15 days. This extended drying time protects volatile aromatics. As a reaction to the increasing complexity around novel processing techniques, Jorge has opted for a more traditional method with this coffee. Our friends at Desarrolladores de Cafe expertly milled this coffee and then we rushed it to Prodigal to preserve quality.
