With refined and elegant flavors of peach and fennel and a delicate florality, this coffee yields a beautiful cup. We also find a touch of raspberry and a zippy pineapple/lemon combo. Ripe cherries were hand-harvested, rinsed, and floated to remove defects. Manual color sorting was also used to increase uniformity. The cherries fermented whole for 40 hours, then they were dry-pulped and fermented again for 40 hours. After the final washing step, the coffee dried for 12-15 days. 

Producer Hermes Ulises Cerón is a first generation farmer who has been working with his family on their farm, El Aguacate, for the past seven years. Perched at 2000 meters, this farm grows just two varieties, one on each side of the spectrum — geisha and castillo. Native trees dot the landscape, and the regional wildlife are protected through hunting prohibitions. Every action at El Aguacate is made in an effort to preserve and improve quality, and Hermes' coffee deserves attention! We hope you love this special, limited run.
