Prodigal is lucky to showcase another special coffee from the ever-innovative Diego Bermudez, a natural-process gesha from his new Hachi Project in Colombia. This coffee is ripe with bold grapefruit, raspberry, and striking florals, cooling into earl grey, grape, and cardamom.

Processing notes paraphrased from Diego:
At the end of the fermentation process of our washed geisha, we extract the must from this coffee and adjust its pH to maintain an ideal environment to sustain microbial activity. We then transfer the coffee cherry to a bioreactor and inoculate it with this must, leaving it in recirculation for 24 hours. At the end of this period, the coffee is then transferred to the natural drying area, where it remains for three days on a covered concrete patio.
What makes all the difference in the drying process of this coffee, preventing it from overfermenting, is the unique location of our natural coffee processing plant. Located in Bolivar - Cauca, this site has constant winds and a relative humidity of 35%. The wind-tunnel effect and humidity allows the coffee to dry rapidly and evenly.
