Prodigal is excited to release this fruity honey-process coffee from Finca La Filadelfia, a farm that Scott was able to visit on his recent trip to Colombia. We enjoy this coffee for its hibiscus, pineapple, and light florals.
This coffee is from Central Filladelfia, a subpart of Filadelfia Farm, a beautiful family farm primarily run by Ramon Hoyos Gómez. In addition to coffee, the family has a small natural forest and harvests tomatoes, beans, peas, bananas, and corn. For more than ten years, Ramon has served as the head of quality and buyer for InConexus in the Huila region. For even longer than that, he has served as a vital community member and has raised the standards of coffee production far beyond Filadelfia.
Only ripe cherries were harvested, sorted by density, and sanitized. The skin and fruit were removed, leaving a thin layer of mucilage. The cherries were then placed on air-flow canopy beds and dried for 16-20 days.
