Diego Vergara Java - Colombia - Green

A zingy, citrusy coffee that nods to its original coffee cherry beginnings. Produced by Diego Vergara and brought to us via Lohas Beans.

This coffee was carefully picked and dried on tables for 36 hours, then depulped and anaerobically fermented for 60 hours before interruption via hot and cold water "quenching" to fixate compounds produced during fermentation. This coffee was dried in a hermetically sealed stainless steel dehumidifier for 36 to 40 hours.
