Jorge's barely-processed 16-hour washed geisha features fresh, tart raspberry flavor, the dried fruit quality of raisin, and a cohesive creamy sensation.  \u003c\/p\u003e\n\u003cp\u003eJorge grew this geisha at El Jardín, a 7-hectare farm in Tolima. This coffee was floated to remove defects and then pulped immediately. It then fermented without water for just 16 hours. It was washed the next day and dried in a deliberately slow process involving three rest periods on days 5, 9, and 13, for a total of 15 days. This extended drying time protects volatile aromatics. As a reaction to the increasing complexity around novel processing techniques, Jorge has opted for a more traditional method with this coffee.
