Coffee cherries were hand picked at maximum ripeness. Then they were rinsed and floated to remove defects, all on the same day of picking. The coffee was fermented in cherry for 120 hours, followed by shade-drying for 8 days, finished with 38 hours of mechanical drying. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eSitting at an altitude of 2200 meters, more than half of the land is set aside as a nature reserve.
